Amaranth is a mild astringent used in strong decoctions for menorrhagia and diarrhea ( thus its common folk name "love lies bleeding"). It is also taken internally for ulcerated throat, stomach and intestines, as well as for diarrhea and dysentery. The decoction is also useful as a douche for leucorrhea.
My main use for this common wayside weed is as an acid neutrlizing green vegetable. Since a diet high in grains, beans, meat and dairy products naturally tends to be more acidic, most green vegetables, being alkalinizing, such as amaranth greens, should regularly be included in the diet to help neutrlize the acidity of these foods. Thus, the fresh leaves of amaranth, commonly known as pigweed in Western countries because it is feed to pigs.Also sold in most Asian marketplaces as a common vegetable. It has a flavor not unlike spinach, and is similarly high in minerals such as iron, as well as being rich source of vitamin A and C. Thus by adding such greens to our diet, based on traditional acidic grains, beans and proteinaceous foods, we experience easy digestibility and lightness.
